Great story ...as usual. I even tried to read it with an accent. I love head cheese...sounds awful, but I find it delicious. (as long as there is no brain in there). We sell it like ham or salami. And it's sliced by the butcher to whatever amount we want. It's great on rye with mustard. Great....now I'm hungry and it's way after midnite.

I thought that was who your 'face-mash-up' was but I wasn't 100% sure! And thanks for the compliment. I know there are lots of people who love souse or 'head cheese'.

In fact, down to the southwest of Austin in Fredericksburg (settled by the Germans in the early 1800s) they have lots of traditional sausages and deli style delicacies like 'head cheese' and they advertise 'no brains' which, I suppose must be a plus!

I love German/Polish/East European as a whole foods - but some of them are a little odd even to this girl who grew up around big ol' glass jars filled with pickled pigs' feet or pigs' snout!

I make my own pickled pig hocks, knuckles, feet....whatever you want to call it. Or just freshly boiled with saurekraut and boiled potatoes. Ok, ok...got to stop now!
